Onion & Chive Mushroom Caps

ONION & CHIVE MUSHROOM CAPS

INGREDIENTS

  • 400g of Avafina Organics Onion & Chive Queen Cheese™
  • 1 tbsp coconut oil
  • A pinch of pepper 
  • 8 Medium/large button mushrooms
  • 3 Garlic cloves diced
  • ½ Cup of diced onion 
  • 2 Large handfuls of spinach

METHOD

  1. In a frying pan, heat the coconut oil on medium/high heat.

  2. Add diced garlic and onion and sauté until fragrant.

  3. Preheat the oven to 350.

  4. Lower the heat and add the spinach, cream cheese and pepper.

  5. Mix well and remove from heat.

  6. Remove stem and insides of the mushrooms.

  7. Stuff each mushroom wit the cream cheese mix.

  8. Place mushroom caps into a baking sheet and bake for 15 minutes.
