Starch derived from the roots of Maranta arundinaceae or arrowroot. The name comes from aru-aru (meal of meals) in the language of the Arawak people. This starch is a light white powder that can be used as a gluten free thickener, making clear, shimmering gels, preventing crystals from forming in ice creams.
